The iconic peanut butter and jelly sandwich had most of our hearts as kids, and some of us still turn to this nostalgic comfort food for a meal from time to time, even though our tastes are more refined in our older age, right? I want to share with you my version of the PB&J when I get the craving for a simple & yummy snack. It’s all the deliciousness of the original but healthier, more nutritious and makes you feel a little more like an adult… at least that’s what I tell myself. I know this is a little risky posting on National Peanut Butter Lovers Month… (I know how some people feel about their peanut butter) but there’s good reason why you should make the switch to almond butter and I explain below.
1 slice of toasted whole grain or gluten free bread 1 Tbsp almond butter Drizzle local organic honey 3 organic strawberries, sliced Sprinkle hemp seeds
Okay… so it’s not a “PB & J” at all. It’s more of an “AB, S, H & HS”… but that is so not fun to say (or remember). Nutritional Benefits: Almond Butter– while peanut butter is what this sandwich is known for… the problem is that 99% or more of this iconic nut butter has been found to be the host of a neurotoxic fungus called alflatoxin that is among the most carcinogenic substances known. I am sorry if you are a huge peanut butter fan… but there is hope because almond butter is a wonderful alternative and I have found that Barney Smooth Almond Butter has the same smoothness and texture as peanut butter and is absolutely delicious! Local Organic Honey- eating “local” honey that comes from your area can actually help with allergies! Bees use the pollen from your part of town (the same pollen you are breathing in and might be allergic too) and the honey acts like a natural vaccine of sorts, providing your system with small amounts of the allergen so that your body builds up an immunity to them. Pretty sweet hu?! Strawberries- fresh is always better than preserved, processed and packaged. Eating fresh, organic strawberries loads your body with cancer fighting and anti-aging vitamin C and antioxidants. Sticky jelly can’t do that! Hemp Seeds- this super food contains all 9 of your essential amino acids (the building blocks of muscle). The protein and fiber can also help regulate blood sugar and keep you feeling fuller longer… think of it as your accountability partner on over snacking! This recipe is also amazing for kids, the “sprinkles” and different textures can be fun for the little ones too!
